Opening old bottles, even well-preserved ones, can be fraught as fragile corks can crumble into the precious liquid. The helix is framed by two metal blades that gently embrace the cork, holding it together as it is drawn out. Top sommeliers swear by it — and it comes in an elegant cork container too.
